  • Seasoning: Coat both sides and bake on the grill at 200°C (400°F) for 30 minutes to create a natural non-stick barrier.
  • Maintenance: Brush clean after every use. Apply a light coat of oil while the griddle is still warm to prevent oxidation.

Cast iron is the gold standard for searing, but it requires a little love to stay in peak condition. Follow this guide to ensure your Broil King® Keg or 180° Griddle remains non-stick and rust-free for years of legendary BBQ.


🟢 First Time Use: The "Grand Opening" Seasoning

Before your first cookout, you must "lock in" the surface of your new cast iron.

  1. Wash Your Grids: Use mild dish soap and warm water. Rinse thoroughly.
  2. Dry Immediately: Never air-dry. Use a towel to bone-dry the grids instantly to prevent flash-rusting. (Do not use a dishwasher).
  3. Apply Oil: Coat both sides generously using a silicone brush or oil mister.
    1. ✅ Use High-Smoke-Point Oils: Avocado (260°C), Rice Bran (255°C), or Canola (204°C).
    2. ❌ Avoid: Butter, margarine, or non-stick sprays (they burn off too fast).
  4. The Bake: Place grids in the grill at Medium/Low (200°C / 400°F) for 30 minutes. This bakes the oil into the pores of the metal.
  5. Cool Down: Turn off the grill and let them cool naturally. You’re ready to grill!

🔄 Every Cookout: The Before & After Ritual

Consistency is key to a perfect non-stick surface.

  • Clean: Use a Stainless Steel Grill Brush or a Wooden Grill Scraper to remove debris before and after you cook.
  • Inspect: If using a wire brush, always check for loose bristles before lighting the grill.
  • Protect: After cleaning, apply a very thin "maintenance coat" of high-smoke-point oil while the grids are still warm.

🚑 Restoration: How to Save Rusty Grids

See some orange spots? Don't panic—cast iron is nearly indestructible. You can restore it in four steps:

  1. Scrub: Use your grill brush to vigorously remove all surface rust.
  2. Deep Clean: Wash with mild dish soap and hot water.
  3. Dry: Towel dry completely (again, no air-drying!).
  4. Re-Season: Follow the First Time Use steps above to bake on a fresh protective layer.
